Recipe: Mint Chip Smoothie
This recipe has been on repeat about 5 times a week. It tastes just like a peppermint patty or thin mint cookie, but is low in sugar. There are lots of options on how you can sweeten this smoothie up- my choice is Lakanto Maple Sweetener. I have a normal/high A1c and have been working diligently over the last 18 months to identify ways to bring it down. One way that has worked in my life was to omit/minimize fruit from my smoothies (most of the time, not all the time) and this sweetener brings just enough to the table that you don’t miss it.
You can use whatever you like! Soaked dates, frozen banana, maple syrup, honey. The goal in any recipe shared is that it is a method for each of you to use, customize and adjust based on your taste buds. I have not gotten tired of this wonderful recipe and once I push publish on this post am going to whip one up!
Ingredients
- 1.5 cups nut milk
- 1 serving of vanilla protein
- 1.5 cups of steamed and frozen zucchini
- 3 cups of spinach
- 1-2 tablespoons of Lakanto Maple Sweetener
- 1 tablespoon cacao nibs
- a few drops of pure peppermint extract (or mint leaves)
- ice
- Chocolate chips for topping (optional)
Instructions
- Place all ingredients (except chocolate chips) into a high speed blender. Using the tamp, blend this smoothie until it is completely smooth and the consistency of frozen yogurt. This can take some time, so be patient and know it is worth the work!
- Place smoothie in a bowl and top with the chocolate chippers!
