Happy Valentine’s Day! Today is a day to celebrate the one’s that we love. It has been so much fun watching the kids sign their cards and get ready to spread some love in school today.
Before Michael and I had Evan and Edie, we would go out to dinner in Boston or Charlotte. Get all dressed up, sip champagne. Very romantic!
Now, I focus on a meal that I can make in advance, so once the kids are tucked into bed we can actually BE with each other.
I don’t want to waste a second prepping, cleaning and chopping when I can be hanging out with my love. While Valentine’s Day looks different now than it did 7 years ago, we certainly take time to appreciate the little things… like a date night in!
So, I wanted to share with you 5 easy to pull together meals, from some of my all-time favorite recipe writers, that allow you to BE with the one you love at night, instead of in the kitchen.
I hope that you love these recipes- some are quick under 30 minute meals and three are casseroles that you can make in the morning (or earlier in the day) and heat up at night!
- Oh My Veggies: Cremini and Chard Stuffed Shells
- Martha Stewart: One Pan Pasta
- Paleomg: Almost 5- Ingredient Pizza Spaghetti Pie
- Cookie and Kate: Roasted Veggie Enchilada Casserole
- SkinnyTaste: Skillet Fish Filet with Tomatoes, White Wine and Capers
Enjoy your day today- I hope it is filled with love and joy.
