Recipe: Whole30 All Vegetable Chili
Hot off the presses! I wanted to share a versatile Whole30 Chili recipe with you- it will make the vegans, vegetarians and meat eaters all happy! You customize this based on your family’s likes- there is nothing better than that!
I have talked before about how I am a seasonal eater- and the temps in Florida have dropped. When it is cold I crave warm foods and this chili fits the bill.
Whole30 All Vegetable Slow Cooker Chili
Ingredients:
(serves 8)
- 2 sweet potatoes, peeled and diced
- 1 yellow bell pepper, diced
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and diced
- 2 garlic cloves, minced
- 28 ounces crushed tomatoes
- 28 ounces diced tomatoes
- 2 Tbsp. tomato paste
- 2 Tbsp. apple cider
- 1 Tbsp. fresh lime juice
- 1 Tbsp. each: cumin & chili powder
- 1 tsp. each smoked paprika, adobo seasoning & coriander
- 2-4 cups organic vegetable/ chicken broth (add more/less based on desired thickness)
- 1/4 tsp. cayenne (optional)
- Optional protein additions: 1-2 pounds cooked organic ground turkey/chicken/beef
- Toppings: red onion, cilantro, avocado
Directions: Add all of the ingredients to a slow cooker and stir until combined. Cook on low for 8 hours.
Serve it with your favorite toppings. This chili is great over spaghetti squash or a baked sweet potato. Its also perfect for breakfast with a poached egg on top! I hope that you love this warm, perfect for winter Whole30 chili as much as our family does. Have a great rest of the day!

Is this the same slow cooker chili recipe you posted a few months ago? I feel like it might be a little different but unfortunately, I did not save it and cannot find it on your blog anymore. Just wondering if you changed it for the Whole 30 program?

Hey Karey! This is a different one- the original has beans and maple syrup in it and is from Nov. 6 😉 This one was created to be W30 compliant. Hope that helps! Have a great one today!
