Recipe: Sweet Potato Pie Smoothie
We are moving into our new house in 11 days and in an effort to lighten our load I am using everything we’ve got in the refrigerator and freezer that I can. When I woke up Saturday I found a leftover baked sweet potato and decided to create a smoothie using it as the star ingredient. I love sweet potatoes- they are rich in vitamin C, beta-carotene and contrary to their name they do not cause blood sugar spikes.
Plus, sweet potatoes remind me of fall, thanksgiving and family. Food always takes me to a happy place- now, onto the recipe!
Sweet Potato Pie Smoothie
Makes 1 large or 2 regular sized smoothies
- 1 sweet potato, baked, cooled and skin removed
- 1 cup nut milk (I have been loving Califia Farms Toasted Coconut and it is perfect in here!)
- 1 cup filtered water
- 1 banana, frozen
- 1 Tbsp. Philosophie Cacao Magic Superfood Blend
- 1 Tbsp. Nuttzo Seven Nut & Seed Butter Power Fuel
- 1 tsp. each: pure vanilla extract & cinnamon
- pinch himalayan pink salt
- 2 handfuls of ice
Directions: Put all ingredients in a high speed blender and run until smooth and creamy. Optional: Top with cinnamon.
This smoothie truly tastes like pie, will keep you full for hours and may just make you crave cozy sweaters and falling leaves. Happy almost autumn!
