To say that this recipe was a success would be an understatement! It was a joy to make since Evan and Edie could basically do the whole thing, is quick to bake and delicious. I enjoy this granola alone, on a salad, with some homemade almond milk or on the kiddos yogurt in the morning.

This granola has Chia Seeds, Hemp Hearts, Goji Berries and Coconut Oil- that is a MAJOR Superfood combo! This blend is loaded up with Omega-3’s/ 6’s, is high in fiber, provides long lasting energy, strengthens the immune system and is a great compliment if you are looking to lose weight.

Superfood Nut, Seed and Fruit Granola:
- 1/2 Cup Unsweetened Coconut Flakes
- 1 Cup Nuts (I used 1/3 Cup each of: Almonds, Cashews and Walnuts) Rough Chopped
- 1/4 Cup Chopped Medjool Dates
- 1/4 Cup Goji Berries
- 2 Tablespoons Chia Seeds
- 2 Tablespoons Hemp Heart Seeds
- 1 Tablespoon Fresh Apple Cider
- 2 Tablespoons Fresh Squeezed Orange Juice
- 1 teaspoon Orange Zest
- 2 Tablespoons Melted Coconut Oil
- 1 teaspoon Cinnamon
- Sea Salt
Preheat oven to 325 degrees Fahrenheit. Mix all of the ingredients in a large bowl to combine. Place in a single layer on a prepared baking sheet lined with parchment. Bake for 15 minutes (or until toasty), mixing the granola on the pan every 5 minutes (this way nothing burns).
Keep in an airtight container and enjoy!
