recipe: purple sweet potato and blueberry smoothie

Jump to recipe

It is fun when you can take seasonal eats- like sweet potatoes- and add them into your smoothies! For this recipe, I used purple sweet potatoes because I love their dense texture and vibrant, violet hue. When I found these in the market I had these visions of creating a smoothie with cinnamon and blueberries to compliment both the color and sweet flavor of the beautiful purple sweet potatoes. These potatoes were diced (with the skin on) then steamed until tender. Once they got cool, just popped them in the freezer for easy additions in the AM smoothie.

I added some Maple Hill Creamery Plain Kefir to this smoothie for the probiotic boost. The sniffles are already going around and will do anything to not get sick.

Another star in this recipe, is Philosophie Superfoods: Cacao Magic. This has been a favorite of ours for a couple of years for a lot of reasons. The taste is a rich cacao- but Sophie, the creator, added reishi, maca, chia and hemp to this blend. You get SO much bang for your buck with this product. Side note: it is also delicious mixed in with plain yogurt and adds 11 grams of protein per tablespoon!

Adding the almond butter, pure almond extract and cinnamon are purely preference! I love all these flavors and when this all got blended up it tasted like a rich, deep purple milkshake.

We are headed to the mountains tomorrow and I am planning on bringing home as many farm finds, local nut butters and growlers of kombucha we can get our hands on. Hoping for lots of fun creations when we return on Monday.

Wishing you all a beautiful weekend and hope that you enjoy this recipe!
