Recipe: Butterscotch Smoothie

Good morning and happy weekend! I am so excited that it is Saturday and we have a full weekend of FUN ahead. Most of all, it is nice to not be driving all day long to and from school 😉

A couple weeks ago, making my morning smoothie, I created something that tasted like butterscotch. The result was a completely decadent smoothie that truly tasted like dessert. Which is probably why I loved it so much. This one has to be shared!

My goal over the coming months is to share more smoothie recipes with you all on the blog. I have such a great time getting in the kitchen creating these smoothies, and I want you to be able to create them, too!

With school having just started, smoothies are an absolute staple for us in the morning. This butterscotch smoothie has been on repeat! I can’t get enough and love the ingredients.

ingredients:

1 cup nut milk ( I use Califia unsweetened almond milk)

1 cup water

1 scoop vanilla protein powder (I use Clean Program)

2 medjool dates, pitted (this is optional, would be delicious without!)

1 cup riced cauliflower, frozen

2 ounces coconut meat, frozen (I use inner-eco fresh young coconut)

1 tablespoon peanut butter (this is where that buttery flavor comes from!)

1 teaspoon pure vanilla

pinch of pink salt

2 handfuls of ice cubes

 

directions: blend all ingredients until smooth and then sip, sip, sip!

I hope that if you try this one out you love it as much as we do! If you want an additional boost of nutrients you can add in some greens. That add would make the color gorgeous, too.

    Thoughts if I leave out the coconut? Would it still test like butterscotch?
