menu plan: september 4-8

Good morning and happy Labor Day! Wanted to share a quickie menu with you all for this week. We have a very busy week ahead and when that happens I find myself gravitating towards warm, comfort foods. One thing that I love is that so many of my friends love cooking and food as much as we do. Sharing recipes and ideas help to keep our meal plans fun and interesting! This week we have a gorgeous line up of food with recipes inspired by our friends.

Here is what we are going to be eating this week:

Monday: Strawberry Plum: Mushroom, Leek and Artichoke Stuffed Shells

  • I will be making the bechemel sauce with unsweetened califia almond milk for this recipe.  We  have done that with creamy sauces before and the results are always perfect!

Tuesday: We will be eating Simple Mills pizza crust with a hummus base and big green salad on top. This is a fun way to boost your veggies but still get to eat pizza 😉

Wednesday: Ina Garten: Warm French Lentils with a lemon kale salad. These lentils have so much flavor and are seasoned with a dijon and red wine vinegar dressing. They are SO good and I definitely recommend this recipe 100%!

Thursday: Love and Lemons: Ginger Noodles with Kale and Shiitakes with a nice piece of seared fish. My wonderful friend has been telling me to make this recipe for a really long time and I am so excited to make it and share it with my parents who will be in town!

One other thing we will be doing this week is getting our hurricane kit prepared. There is a chance that Irma is going to head our way and we need to get our kit together. I will be sharing on Instagram this week what all we are going to have just in case we need to evacuate. When Matthew hit last year I lived off of my favorite bars and nut butters. This year, my hope is to be a little bit more prepared and with a few more options for our family. If  you all have any ideas or tips, please share them with me!
