menu plan: august 27-31

In an effort to make life simple, we are meal planning every week. Aiming for easy family dinners that make everyone happy. Now that school as started, I’ve found it is even more important to map out everything we will be eating so that I don’t have to make last minute shopping trips. It is nice to know that when we get home from school we have everything on-hand to make dinner.

In the past, Michael and I ate after the kids went to bed. They are in bed by 7:00 PM, and sometimes that paired with Michael’s work schedule didn’t allow us time to sit together each night. Very thankful that he is home by 5/5:30 PM most nights and that we all get to eat together more often. Side note: I LOVE eating dinner around 5:00. We go to bed early and it is so nice to eat early and not have a full belly of food before going to sleep at night.

Most of the time, the kids like what we eat for family dinner. But, they are are kids and our only rule is that you have to try everything once. They may not love it all, but they are exposed to it all.

Here is our menu plan this week:

Sunday: Grilled vegetables and Spiralized Sweet Potato, Kale and Goat Cheese Frittata

Monday: Banza pasta salad with bell peppers, cucumbers, red onion, spinach, blueberries and roasted pumpkin seeds

Tuesday: Eating Bird Food: Zucchini Bread Oatmeal

Wednesday: Roasted vegetables (sweet potatoes and broccoli), farro, chickpea and massaged kale bowls

Thursday: Avocado toast with baby heirloom tomatoes and watermelon salad

 

My guess is that on Friday we will get take-out or eat out with the kids. So, I am not planning out that night. If you have any questions about these meals or how we menu plan, don’t hesitate to reach out. I am always happy to help!
